William Arley Cruz grows Castillo variety on 6 hectares in Acevedo, Huila, and is careful to make sure the coffee is picked at its ripest, when the color is bright red. This microdot gives us the feeling that Spring is in the air! The first sip is tart like green apple, and then finishes with a smooth toffee and brittle flavor. We recommend brewing this coffee in a Chemex!
